Hi, I'm Yidi. Today I'll show you how to make Chinese dumplings, jiao zi. So, in Chinese homes dumplings are a traditional must-have food on New Year's Eve.

你好，我是依迪。今天我来教大家包饺子。饺子是中国家庭除夕夜必吃的传统食物。

Families wrap them up and eat them as the clock strikes at midnight. The finished dumpling dough texture should be soft, but not too wet.

当午夜钟声敲响时，家家户户都要吃他们包好的饺子。揉好的面团应该是软的，但又不能太湿。

Resting the dough can make the dough feel really smooth and soft so it makes the kneading process easier later.

醒发面团可以使面团变得光滑柔软，这样再来揉面就容易多了。

I think adding ground Sichuan pepper is a secret ingredient I've learned from my mom making dumplings.If you taste it by itself, it gives you a little numbing on the tongue.

在饺子馅料里加入花椒粉，是我从妈妈那里学到的秘方。如果你单独尝它的话，肯定会有点麻。

However, when you put it in the stuffing, it will give you depths and flavor.My personal twist to the recipe is adding shrimp to it. Adding shrimps to the recipe provides you a more refreshing flavor and I hope other people can enjoy it, as well.

但是，当你把它放进馅料里，它就会增加风味和层次。我个人的做法还会往里面加一些虾仁。在馅料里加入虾仁会让饺子吃起来更清爽，希望你们也能喜欢。

I remember when I was a kid on Chinese New Year Eve my entire family, a full house of people, they will stand together and make the dumplings and my mom will always save the extra dough for me and my little cousin.

我记得在我小的时候，到了除夕夜，全家人都会聚在一起，满满一屋子的人全都站在一起包饺子，我妈妈总会多留一点面团给我和我的弟弟（妹妹）。

We would just play with it for the night.Shaping the dough into a doughnut shape helps you to get an even rope out of the dough so later when you portion it you can get a nice, even smaller portions out of it, as well.

我们整晚都会拿着面团玩。把面团捏成一个圈，方便你把它揉成一条光滑的绳子，当你准备把它分成小份的时候就更容易操作了。

So I think that's a cool trick from my mom. When you're portioning dough, that's also another trick I learned from just watching how my family does it. The turning technique will help you get a nearly more perfect ball when you try to ball it up later.

这是我妈教给我的一个小窍门。关于切分面团，我还和家里人学到了另外一个技巧。像这样一边转一边切，切分出来的面团就更容易揉成一个球。

Eating dumplings reminds me of making it with my parents and my extended family on all different occasions.

每次吃饺子的时候，我都会想起和家人，在不同场合一起包饺子的场景。

It could be a weekend dinner or Chinese New Year. Since now I'm away from home, I live abroad, whenever I eat dumplings, I think about my family members and how they're doing.

有时候是周末聚餐，也可能是在春节的时候。现在我离开了家，住在国外，每当我吃饺子的时候，我就会想起我的家人。

A younger me, before I left home, I wasn't super into dumplings at all, but when I moved away from home when I was in Chicago living with my roommate, we would make dumplings sometimes because it makes me feel homey and it's a remedy for homesick.

在我更年轻的时候，也就是离开家以前，我一点也不喜欢吃饺子，但自从我离开了家，来到芝加哥和室友住在一起，我们时不时就会包顿饺子，因为这让我有家的感觉，是治疗思乡的良药。
